Operation: No More Pop Tarts (convenient healthier options for breakfast on the go)


Since his grad-school days, Michael’s work day breakfast of choice has always been Pop Tarts. I have suggested the instant oatmeal or other breakfast bars, yogurt, etc. He shuns them all!

While he seems to metabolize all that sugar just fine, I think he’s noticed his sugar crash more and more. And it’s just not healthy or sustaining. We need real food. We need convenient breakfast. We need something tasty & filling.

So I’m going to start a series here on Frogging It: Operation: No More Pop Tarts!

I decided to start somewhere I knew I’d have some success. Whenever we’re out of Pop Tarts, Michael will buy a breakfast burrito at school. I decided to make a bunch of breakfast burritos ahead, wrap individually, and freeze until you’re ready to eat them.


Freezer Breakfast Burritos
A dozen eggs, scrambled
1 lb. Italian sausage or other pork sausage (browned & crumbled)
1 bag frozen hash browns, fried (I used coconut oil the first time, but hubby prefers no coconut oil in his breakfast burrito.)
1-2 packages flour tortillas
Shredded cheddar cheese to taste


I combined all of the ingredients, except the tortillas, in a large mixing bowl, then filled tortillas & rolled them into burritos. After they were all finished, I individually wrapped them & put them all into a freezer bag.

Now Michael just takes one out in the morning and heats it up in the microwave at work.


Next batch may include peppers & onions.
